Masala Oats with Greens and Eggs

We would like to introduce you to your new favourite brunch. Masala oats is commonly made in India for breakfast. The combination of mustard seeds, curry leaves and green chili is a very distinct flavour combination, and though it can be skipped and the dish will still be delicious without it, try it once for an idea of what it should ideally be like.

Ingredients
  

  • 1 tbsp Ghee / Coconut Oil
  • ½ tsp Black Mustard Seeds
  • ½ - 1 Green Chili sliced
  • 4-5 Fresh Curry Leaves
  • 1 ½ cups Rolled Oats or steel cut
  • ½ tsp Turmeric Powder
  • ½ tsp Fresh Ginger grated
  • ½ tsp Ground Coriander
  • ¼ tsp Ground Cumin
  • 1 ½ tsp Salt
  • ½ tsp Black Pepper
  • ¼ cup Cilantro minced
  • 1 cup Greens (spinach, kale, chard, mustard, beet tops etc) chopped
  • 750 ml Shorba Chicken Bone Broth
  • 4 Eggs

Instructions
 

  • Heat ghee on medium heat, and once hot add the mustard seeds. When they begin to pop, add curry leaves and ginger and stir quickly for 15 seconds
  • Add turmeric, coriander, cumin and salt and stir just to combine
  • Tip in the oats and stir to coat with the spice mix
  • Add the broth and turn the heat to high. Once it comes to a boil, turn the heat down and simmer for 10 minutes or until oats are just about cooked (will take longer for steel cut)
  • Add the greens and continue to cook till oats are to your liking. Thin out if needed with either more broth or water. At this point, either fry some eggs in a separate pan, or crack them on top of the oats, put the lid on and steam for a few minutes till the whites are cooked. Runny yolks are the best consistency for this dish
  • Crack some black pepper and sprinkle the cilantro on top to finish
